Even though this isn’t the actual Jennifer Anniston salad… it still deserves the hype 🥒

Ingredients:
• 1 cup quinoa
• 1 cup lite feta, crumbled
• 2 baby cucumbers, chopped
• 1 can chickpeas, rinsed & drained
• 1/3 cup mint, chopped
• 1/3 cup parsley, chopped
• 1/2 red onion, diced
• 1/3 cup walnuts, chopped

Dressing:
• 1/2 cup olive oil
• juice of 1 lemon
• 1 garlic clove, grated
• salt & pepper to taste
(I added a drizzle of honey)
