We start by making a creamy cashew and almond milk in our Nama M1, then use the leftover pulp to bake these unreal cookies, finished with a pistachio butter centre and they’re perfect dipped back into the creamy nut milk!

Nut Milk Ingredients Ingredients

80g raw almonds
80g raw cashews
1 litre water
2–3 pitted dates (optional, for sweetness)
1 tsp vanilla extract (optional)
Small pinch of sea salt

Thumbprint Cookie Ingredients

Pulp from your nut milk (from the above batch)
100g rolled oats
2 ripe bananas (mashed)
3 tbsp maple syrup (or honey)
2 tbsp coconut oil (melted)
1 tsp cinnamon
1 tsp vanilla extract
1 tsp baking powder
Pinch of salt
50g Dark chocolate chips
Thumbprint coating and filling
30g coconut sugar
40g Pistachio butter
