COLOMBIAN MERENGON
This is one of my favorite treats to indulge in back at home and it’s sure to impress your loved ones for Hispanic Heritage Month. Best of all, this recipe is very easy to make and doesn’t require many ingredients. All you need to do is whip together ½ cup of egg whites with the juice of half of a lime, then slowly add 1 cup of sugar until stiff peaks form. Spoon on a baking tray and bake in the oven at 250°F (120°C) for about two hours. Right before it comes out of the oven, prep your whipped cream by mixing 1 cup of heavy cream with 1 tablespoon of powdered sugar and 1 tablespoon of vanilla extract. From there, assemble the layers with the fruit of your choice (I went with kiwis, strawberries, and pineapple) and dig in!
