How to make a Healthy Burrito – The Happy Pear Recipe

Here’s our hunger busting burrito recipe – a great one to try for a quick and easy dinner!
A great one to share with friends (young and old) for lunch or dinner!

Here’s the recipe:

6 pack of wraps or tortillias – (ideally 100% corn or wholemeal but if not white will do fine!)

Spicy cous cous:
250g wholemeal cous cous
boiling water
1 tsp cumin
1/2 tsp chilli
1/2 tsp salt
1/2 tsp smoked paprika if you have it

Refried beans:
1 can blackbeans/ red beans
3 cloves garlic
Juice of 1 lime
2 tsp cumin
1/2 tsp salt
3 tbsp water
Coriander to garnish

chunky tomato corn guacamole:
2 ripe avocados
1/2 juice of 1 limes
1/2 cloves of garlic
8 cherry tomatoes
1/2 teaspoon of ground cumin
1/2 teaspoon of salt
pinch of ground chilli
pinch of black pepper
fresh coriander
100 g of cooked sweet corn from a can

sour cream tahini mayo:
4 tbsp tahini
juice of 1 lime
1 tbsp agave
4 tbsp water

Spicy cous cous
For the spicy cous cous boil the kettle, in a bowl mix the cous cous with all the spices, cover with boiling water until covered approx ½ inch above the level of the dry cous cous. Cover with a lid and leave to cook for 5 mins

Refried beans:
Add 2 tbsp of oil to your frying pan and turn on medium heat, chop the garlic finely and fry the garlic until it starts to go golden, rinse and wash your canned beans. Add to the garlic in the hot frying pan and add in the rest of the ingredients, stir regularly and start to mash slightly with a wooden spoon. This should take about 4 mins once ready, season to your pallet and once tasting great rip up some coriander to add freshness and vitality.

Guacamole:
chop the avocados into small bite sized piece into a big bowl, add the rest of the ingredients and mash slightly so everything comes together – adjust the seasoning if you want to but it should taste great as it is!

Sour cream tahini:
add all ingredients to a bowl and mix well until reaches a mayonnaise like consistency

take your wrap and add the ingredients as you like – roll it and heat on the pan till it starts to crisp up and is warm – enjoy!
