wet ingredients:• 1 1/4 cups cottage cheese• 1 tsp vanilla extract• 2 tsp maple syrup
blend all wet ingredients until smooth. reserve 2 tbsp of the mixture for the glaze.
dry ingredients:• 1 3/4 cups all-purpose flour (or gluten-free all-purpose flour)• 2 tsp baking powder• coconut sugar• cinnamon
additional:• coconut oil
glaze:• reserved cottage cheese mixture• 3 tbsp powdered sugar
instructions:
1. blend wet ingredients until smooth and set aside 2 tbsp for the glaze.
2. mix in flour and baking powder until a dough forms.
3. roll out dough, brush with coconut oil, and sprinkle generously with cinnamon and coconut sugar.
4. roll up, slice into rolls, and place in a baking dish.
5. bake at 350°F for about 20 minutes, until lightly golden.
6. mix the reserved cottage cheese mixture with powdered sugar and drizzle over warm cinnamon rolls.
