Last weeks tray bake did really well so we’re guessing people are feeling the same way we are about the cold weather rolling in. This weeks Aubergine Parmigiana is an easy and delicious belly hug tray bake. We made it low fodmap to help introduce people to food that is good for gut health and might shed some light on a condition you may have lived with unknowingly. Low fodmap food is low in ferment-able carbohydrates that result in IBS and other gut health issues.
