Ingredients:
β’ 1 cup quinoa
β’ 1 cup lite feta, crumbled
β’ 2 baby cucumbers, chopped
β’ 1 can chickpeas, rinsed & drained
β’ 1/3 cup mint, chopped
β’ 1/3 cup parsley, chopped
β’ 1/2 red onion, diced
β’ 1/3 cup walnuts, chopped
Dressing:
β’ 1/2 cup olive oil
β’ juice of 1 lemon
β’ 1 garlic clove, grated
β’ salt & pepper to taste
(I added a drizzle of honey)
