INGREDIENTS
β’ 4 cups frozen mango chunks
β’ 2 cups frozen raspberries
β’ Juice of 1/2 lime
β’ Β½ cup full-fat canned coconut milk (split)
Chocolate Magic Shell:
1/4 cup semi-sweet chocolate chips + 1 tbsp coconut oil
How I make it:
Blend mango + lime juice + half coconut milk until super creamy.
Scoop out half the mango ice cream, then add the raspberries to the blender (add just enough coconut milk to get it blending) and blend until smooth.
Scoop both colours in bowls π₯£
Melt chocolate chips + coconut oil together (double boiler or microwave in short bursts) until smooth.
Drizzle the warm magic shell over the ice cream and watch it harden instantly into a crisp shell!
Finish with natural dye rainbow sprinkles π
