Another cheesecake for ya! Super simple and doesn’t need the stand mixer, you can use beaters.
16 oz softened cream cheese
1/2 cup sour cream
1/2 cup sugar
2 eggs
1 tbsp vanilla
~18 Oreos
Beat cream cheese, sour cream, and sugar til smooth. Add eggs and vanilla and mix until combined. Add 3 crushed Oreos and mix. Line a muffin tin+ 3 additional cups with cupcake liners, and place a whole Oreo in each tin (this gave me 15 total mini cheesecakes). Pour batter into each cup. Bake on middle rack at 275F for 22-28 minutes, until the top is no longer glossy and jiggly. Cool completely, then refrigerate at least 3 hours. Top with whipped cream (optional) enjoy!
