How to make Barmbrack – The Happy Pear – Irish Halloween Cake

October is about to begin and we’re feeling a little Halloweeny and decided to bake a traditional Irish Barmbrack. This is one all you Irish people around the world can be proud of and make coming up to the holidays.

Barm Brack

200g Buckwheat flour
250g mixed dried fruit
300ml cold black tea/ earl Gray
2 teaspoon mixed spice (cinnamon, nutmeg, allspice)
75g coconut oil
125g agave/ honey
2 tsp baking powder
1 flax egg (1tbsp ground flax: 3 tbsp water)
A ring, piece of cloth, thimble

pre heat oven to 170 degrees

boil the kettle and brew a 300ml cup of black tea, transfer to a large bowl
Add the dried fruit to the hot tea, ensuring to leave the tea bag on top

make your flax egg

add flour and baking powder and mixed spice in a large bowl and mix well

melt coconut oil and transfer to a large bowl add the agave, flax egg and mix well

add the wet and dry ingredients together, add the dried fruit

bake for 1 hour at 170 degrees
