Ingredients

  • 2 tablespoons butter
  • ½ large onion chopped
  • 2 ribs celery chopped
  • 2 ounces mushrooms sliced, optional
  • 1 ½ tablespoons fresh parsley or 1 tablespoon dried parsley
  • 1 box stuffing mix any variety, 6 oz each
  • 2 cups reduced sodium chicken broth

Instructions

  • Preheat the oven to 350°F. Lightly grease a 1 quart baking dish.

  • Heat butter in a medium skillet over medium heat. Add onion, celery, and mushrooms, cook until tender, about 5-6 minutes.

  • Place the box stuffing mix into the prepared baking dish. Add the onion mixture, parsley and 1 cup of broth. Stir and let rest 3 minutes. Add the remaining broth a bit at a time to reach desired consistency.

  • Bake uncovered until golden, about 20-25 minutes.

Notes

  • This recipe can be doubled or tripled and cooked in a 9×13 pan for 30 minutes.
  • Refrigerate leftovers in a covered container for 3-4 days.
  • Reheat on a hot griddle, in the oven or in the microwave.
