Easy Teriyaki Noodles

Ingredients Needed

RAMEN: Ramen noodles are affordable and plentiful! Stock up and don’t use the sodium-laden seasoning packets! No noodles? Use jasmine rice, brown rice, or orzo!

COLESLAW: Pre-packaged coleslaw is a real time-saver and it includes colorful shredded carrots and purple cabbage. Regular shredded cabbage is okay, too!

TERIYAKI SAUCE: Any store-bought brand of teriyaki sauce works in this recipe, or make your own DIY blend.

PRO TIP: Make sure to add the teriyaki sauce only as needed.

MEAT: This recipe calls for cooked chicken. Shredded or diced cooked chicken breast works perfectly, but chicken thighs or a mixture of white and dark meat from a rotisserie chicken would also be delicious. 

How to make Teriyaki Noodles

  1. Cook ramen, drain noodles, and save some pasta water (as per the recipe below).
  2. Saute coleslaw mix, add noodles, meat, and sauce.
  3. Cook until heated through, garnish and serve.

In the Microwave: Cook ramen noodles per package directions for the microwave. Stir in the remaining ingredients and cook another 3 minutes in the microwave (to soften the coleslaw mix). Garnish with sliced green onions before serving.

Recipe Variations

VEGGIES: Add any combination of fave veggies like peas, green beans, baby corn, broccoli, or cauliflower florets. Make it fancy and add bean sprouts, sliced mushrooms, or crunchy water chestnuts.

PROTEIN: Keep it vegetarian and leave out the protein or add some tofu. Or make teriyaki noodles with chicken, sliced beef, shredded pork, shrimp, or salmon.

SEASONING: Season with a bit of soy sauce, or add some sriracha, sambal, or red pepper flakes for a spicy twist! No green onions for garnish? Try a sprinkle of parsley or even cilantro, some sesame seeds, or even chopped peanuts or sliced almonds.

Leftovers

Keep leftover teriyaki noodles in a covered container in the refrigerator for up to 4 days. Reheat on the stove or in the microwave. It’s not recommended to freeze this recipe since the noodles will not thaw well. But since this recipe is so quick and easy, just make another batch or two!

Ingredients

  • 2 packages ramen noodles
  • 2 cups coleslaw mix or shredded cabbage
  • 2 teaspoons oil
  • 1 cup shredded cooked chicken or cooked shrimp
  • cup teriyaki sauce
  • 2 green onions

Instructions

  • Bring 4 cups water to a boil. Add ramen and cook 3 minutes. Set aside 1 cup pasta water and drain the noodles.

  • Meanwhile, cook coleslaw mix in oil until tender, about 3 minutes. Add cooked noodles, chicken or shrimp and teriyaki sauce.

  • Bring to a simmer, adding pasta water if needed. Simmer 2 minutes or until heated through. Garnish with green onions.

Notes

  • Refrigerate leftovers in a covered container for up to 4 days. This recipe is not recommended for freezing as the noodles do not thaw well.
  • Reheat in the microwave or on the stovetop.
