SPICY: For a mild salsa, remove the jalapeno seeds. For a spicier flavor, leave the seeds in. Finely diced Anaheim chiles and poblano chiles can also be used and are so tasty.

VEGGIES: Stick with red onions for both color and sweetness. Diced avocado, bell peppers, celery, and corn niblets add extra flavor and crunch, so why not give them a try!

  • 2 cups pineapple diced
  • 1 cup tomatoes diced
  • 2 tablespoons jalapeno minced
  • 2 tablespoons chopped cilantro
  • 1 tablespoon red onion diced
  • ½ teaspoon cumin
