Thank the French for creating quiche, but nearly everyone worldwide has their own version of it! This bacon quiche is loaded with crispy bacon, colorful peppers, and sharp cheddar, all baked into a creamy, crustless dish that’s perfect as a breakfast, lunch, or light supper.

What is Quiche?

Quiche can be served hot or chilled.  It’s an egg and dairy-based (custard) tart filled with any combination of meats, cheeses, and vegetables. It can also be made with a crust or crustless. The most popular version, Quiche Lorraine, always contains bacon and a sharp, white cheese like Gruyere or Swiss baked into a custard with a crust.

Bisquick Quiche

  • This bacon and cheese quiche recipe will make any home cook feel like a French chef! The ingredients are affordable and easy to find, and the Bisquick ‘crust’ is baked right in!
  • Make cheesy bacon quiche in one pie plate and have it on the table in minutes! Or, bake in advance, cover, and chill until ready to serve or serve hot!
  • Short on time? Use a pre-made container of eggs ready-to-use, pre-made bacon bits, and a bag of vegetable medley. Make sure the veggies are thawed or they will sink to the bottom of the quiche and make it watery.

EGG BASE: The key to a restaurant-worthy quiche is the right ratio of eggs to dairy. Choose large eggs for extra fluffiness. PRO TIP: Whisk in an extra egg white for extra height, color, and a boost of protein! Using full fat milk or cream will also produce a rich and creamy quiche.

BACON: Everything’s better with bacon! Regular bacon, pepper bacon, or maple bacon are all good flavors to try in this recipe. Unless the bacon pieces are free from fat, cook them before using. Raw bacon pieces will produce a greasy quiche, and no one wants that! Other common meats to use in quiche are diced ham, sausage (links or ground), salami, bay shrimp, and smoked salmon.

VEGETABLES: Typically fresh, spring vegetables like asparagus, peas, tomatoes, spinach, green onions, and leeks are seen in quiches. Mushrooms, chopped broccoli, zucchini, and kale can all be added.

CHEESE: A generous amount of cheddar cheese makes this quiche uber-delicious! Choose cheeses with strong flavors like Swiss and Gruyere, if substituting. Soft cheeses like bleu cheese or feta crumbles can be added with other cheeses for a more complex flavor, but cannot stand on their own. But they do make excellent garnishes for the top!

How to make Bacon Quiche

One pie plate in 3 steps! It doesn’t get any easier!

  1. Place bacon, half the cheese, onions, and peppers in a pie plate.
  2. Whisk the Bisquick, eggs, milk, and seasonings together and pour over the top.
  3. Bake (per recipe below) until a knife in the center of the quiche comes out clean.

What to Serve with Quiche

This Bisquick quiche can easily be served all my itself. But if looking for a more hearty meal, or serving a crowd, there are several complimentary dishes to try. A light and fruity Spinach and Strawberry Salad or a tasty Tomato Salad would be delicious, and why not add a few Easy Dinner Rolls for those with a big appetite.

Can Quiche Be Frozen?

Freeze whole or portioned baked quiches for up to a month and thaw in the refrigerator until ready to reheat or serve.

Recipe Tips!

  • It might be tempting to add all kinds of meat and veggie mix-ins, but too much will keep the quiche from getting that light and fluffy texture that makes it so elegant!
  • Use the exact amount of cheese (or a desired combination) for the recipe. Too little and it won’t have enough flavor and too much will make the quiche greasy and heavy.
  • Test for doneness at 25 minutes to see if it’s ready. Overcooked quiche is rubbery and does not make for good leftovers!

This savory and delish Bisquick cheese and bacon quiche is an easy recipe that’s loaded with crispy bacon, peppers and plenty of sharp cheddar.

Ingredients

  • 8 strips bacon cooked and crumbled
  • 1 cup cheddar cheese shredded, divided
  • 2 green onions sliced
  • 1 red pepper diced
  • ½ cup Bisquick
  • 3 eggs beaten
  • 1 cup milk
  • ⅛-¼ teaspoon salt
  • teaspoon pepper

Instructions

  • Preheat oven to 400°F. Grease a 9 inch pie plate.

  • Put bacon, half of the cheese, onions, and peppers into the bottom of the pie plate.

  • Combine Bisquick, eggs, milk, salt and pepper together and pour over the ingredients in the pie plate. Sprinkle remaining cheese on top.

  • Bake for 30-35 minutes or until a knife comes out clean.

Notes

  • Avoid adding too many meat and veggie mix-ins. It will weigh down the quiche and keep it from getting a light and fluffy texture.
  • Use the amount of cheese the recipe suggests. Too little and it won’t have enough flavor. Too much will make the quiche greasy and heavy.
  • Refrigerate leftovers for 2-3 days and freeze for up to a month.
  • Thaw quiche in the refrigerator until ready to reheat.
