FILLING – The ingredients for the filling are probably already in the fridge and pantry! Frozen carrots (no need to thaw!), mayonnaise, shredded cheddar and some seasonings are all that is needed for this simple, cheesy filling.

TOPPING – Choose your own chips! Regular potato chips are used here, but this side dish is perfect for experimenting! Sour cream and onion or barbecue flavored chips are complementary. No chips? A handful of crushed Ritz crackers, Panko breadcrumbs, or even a few Saltines will still bake into a crispy topping.

VARIATIONS – Carrot casserole is such a versatile dish, it’s brand new every time. Use fresh carrots (steam or boil first), or frozen carrots in coins, baby carrot-shaped, diced or julienned. For a more colorful dish, and a boost of healthy nutrition, add frozen peas, freshly cut zucchini, broccoli, cauliflower, or squash. Recipe Tips

  • Thicker chips like kettle-style or tortillas work best. If the chips start to brown too quickly, cover the dish with foil and bake until carrots are tender.
  • Be sure the carrots (and any other veggies) are cut to the same sizes so they bake evenly.
  • For an extra creamy sauce, add softened cream cheese to the mayonnaise cheese mixture.
  • Make an extra crunchy topping by adding more crushed potato chips to the top of the baked casserole and place it under the broiler until the topping is browned and crispy.

Leftovers

Keep leftover sweet carrot casserole in the refrigerator covered in plastic wrap for up to 3 days. Freeze leftovers in portions for up to 8 weeks. Thaw in the refrigerator, and reheat in the oven at 350˚F for about 15 minutes until warmed through.

Ingredients

  • 4 cups frozen carrots
  • 1 cup mayonnaise
  • 2 ½ cups cheddar cheese shredded
  • ½ teaspoon onion powder
  • ½ teaspoon garlic salt
  • salt and pepper to taste
  • ½ cup potato chips any flavor, crushed

Instructions

  • Preheat oven to 375°F. Grease an 8×8 casserole dish.

  • Place frozen carrots in casserole dish.

  • Combine mayonnaise, shredded cheese, and seasonings. Spread over top of carrots.

  • Crush up potato chips and sprinkle over top.

  • Bake for about 30 minutes, so cheese is melted and carrots are fully cooked.

Notes

  • Cover with foil to avoid chips browning too much. Remove foil for the last 10 minutes of cook time.
    If using fresh carrots, teamed or boil them before adding to the casserole dish.
    Get creative with different chip flavors!
