Freeze muffins by wrapping them individually in plastic wrap and then placing them in a zippered bag with the date labeled on the outside for up to 3 months. Thaw in the refrigerator and reheat in a 300˚F oven for about 10 minutes or until heated through.

Ingredients

  • 1 box Stove Top stuffing
  • ½ cup fresh cranberries chopped
  • 1 egg
  • ½ teaspoon thyme optional
  • salt and pepper to taste

Instructions

  • Preheat oven to 375°F. Coat muffin tray with cooking spray.

  • Make Stove Top stuffing according to package directions. Add cranberries and allow to rest and cool slightly.

  • Mix in egg and seasonings until evenly incorporated.

  • Scoop a ½ cup stuffing into each muffin cup.

  • Bake for 15-20 minutes.
