Gravy cheese fries are similar to Canada’s famous Poutine fries but made with mozzarella instead of squeaky cheese curds. Plus the gravy is redder and thicker than that of Poutine. Southern Disco fries are made with chunks of country-style ham in a mustard-based sauce and topped with sliced green onions. This recipe for Disco fries likely goes back to the ’70s when party-goers ordered platters of gravy cheese fries after a night out on the town.

POTATOES: Make your own homemade French fries or use frozen waffle fries, wedges, shoestring, or even tater tots!

GRAVY: This recipe is made with a tomato-based, savory gravy that can be as made mild or spicy by adding some red chili flakes. For extra creamy gravy, whisk in a little heavy cream. Try using a combination of melty cheese like mozzarella and cheddar for color and flavor. Top with bacon bits, sliced, black olives, or jalapenos!

How To Make Disco Fries

  1. Prepare potatoes & bake (as per the recipe below).
  2. Sauté onion until tender, stir in garlic, tomato, & seasonings.
  3. Add butter & flour, whisking to avoid lumps.
  4. Pour in broth slowly, whisk until smooth, then simmer & strain gravy.
  5. Cover fries with shredded cheese. Pour gravy over top & garnish if desired.

Recipe Time Saving Tips

  • Save time by making the gravy while the potatoes are soaking.
  • Don’t skip soaking the potatoes because this removes some of the starch in the potatoes, making them crispy as they bake.
  • If the gravy develops lumps, simply pour it into a small blender and puree it until it’s smooth.

Ingredients

  • cup mozzarella cheese shredded

Brown Gravy

  • 1 teaspoon olive oil
  • ½ onion diced
  • ½ Tablespoon tomato paste
  • ½ teaspoon thyme
  • ½ teaspoon pepper
  • 2 garlic cloves minced
  • ¼ cup butter
  • ¼ cup all-purpose flour
  • 1 ¼ cups condensed beef broth

Instructions

Fries

  • Wash potatoes (peel if desired) and cut into ½” fries.

  • Let potatoes soak in cold water for at least 30 minutes. Remove and dry very well.

  • Toss with oil and salt. Spread on prepared pan in a single layer.

  • Bake for 20 minutes, then turn oven to 425° and cook fries until golden (about 20-25 minutes more)

Gravy

  • While fries are baking, cook onion in oil over medium heat until tender. Add garlic, tomato paste, seasonings, and cook for 2 minutes.

  • Stir in butter, add flour and cook for 5 minutes stirring constantly.

  • Add beef broth and 1 cup of water a bit at a time stirring after each addition until smooth. Bring to a boil, reduce heat to a simmer and cook for 2 minutes. Strain through a mesh strainer.
