This Cinnamon Roll French Toast Casserole is an easy morning recipe that bakes in just a half-hour!

Cinnamon Roll French Toast Bake is perfect for Christmas or a Sunday brunch! Prep the cinnamon rolls overnight in the casserole dish, and in the morning, pour the premade egg mixture over the top. Then just bake, and wait for everyone to run to the table!

What Is A Cinnamon Roll French Toast Bake?

No need to buy special bread, or to dip bread slices into a mixture. Open up a can of Pillsbury refrigerated cinnamon rolls and top with a sweet and creamy French toast mixture. Bake it and serve it—it’s really that simple! Serve with warmed maple syrup, freshly whipped cream, and some fruit kabobs. A hot peppermint mocha latte goes nicely, too.

Ingredients and Variations

CINNAMON ROLLS  – This recipe calls for refrigerated cinnamon rolls, the kind you can find in a can. Use Pillsbury or any other brand. 

EGGS – This is the French Toast part of the casserole. Eggs make it all come together into a light and fluffy breakfast treat.

CINNABON COFFEE CREAMER – If it’s too hard to find, use any type of cinnamon or vanilla creamer with some light seasonings.

TOPPING – A handful of pecans for the topping get toasty and add the perfect cinnamon bun crunch..

Variations

  • You can also mix in frozen blueberries or strawberries with the cinnamon rolls, or add some orange zest to the egg mixture.
  • Can’t find Cinnabon creamer, or prefer to make it homemade? No problem! Just add cinnamon and vanilla extract (to taste) to regular coffee creamer or whipping cream.
  • For a less sweet version, use refrigerated biscuits instead of cinnamon rolls.

How To Make It?

We love that this recipe is so easy to make on its own! 

  1. Preheat oven, melt butter and pour into baking dish.
  2. Cut up cinnamon rolls and add to baking dish. Set icing aside.
  3. Beat eggs, add creamer, vanilla, and cinnamon. Pour mixture over cinnamon rolls. Sprinkle with chopped pecans.
  4. Bake according to recipe below until casserole is cooked through. Remove from oven and allow to set.
  5. Top with icing and serve.

Recipe Tips

  • For a richer, denser, cinnamon roll French toast, mix 2 whole eggs and one egg yolk.
  • Cook the chopped pecans in a small pan until they are lightly browned. This cooks off some of the oils and makes them super crunchy and flavorful!

How To Store Leftovers

  • Keep leftover Cinnamon Roll French toast in a sealed container in the refrigerator for about 3 days.
  • Easily reheat it in the microwave for an individual serving or place the entire dish under the broiler for about 5 minutes.
  • Don’t forget the warm maple syrup and whipped cream!

How To Freeze Cinnamon Roll French Toast

Once the casserole is completely cooled, cut into sections, wrap in plastic wrap, and seal in quart-sized freezer bags. Freeze for up to 8 weeks and thaw in the refrigerator. Reheat in the microwave, toaster oven, or under the broiler.

This Cinnamon Roll French Toast Bake is perfect for busy weekdays or lazy weekends!

    cans
    refrigerated cinnamon rolls
  • ½
    cup
    Cinnabon coffee creamer
  • 3
    eggs
  • 1
    stick of butter
    (or ½ cup butter)
  • 1
    tablespoon
    vanilla extract
  • ½
    cup
    pecans
    chopped
  • 2
    teaspoon
    ground cinnamon

  1. Preheat oven to 375˚F.

  2. Melt stick of butter and pour it into the bottom of a 9 x 13 baking dish.

  3. Cut each cinnamon roll into four pieces and add to the melted butter in the baking dish. (set frosting aside for later)

  4. In medium sized mixing bowl, beat eggs until blended. Add creamer, vanilla, and cinnamon. Blend and pour over cinnamon rolls. Sprinkle with pecans.

  5. Bake for 25-30 minutes, until baked through. Allow to cool 15 minutes, then top with frosting and serve.

(if you don’t have Cinnabon creamer you can use cinnamon vanilla flavored or even just vanilla flavored),
