What Is Meatloaf?

Meatloaf is the ultimate in American comfort food and everyone has a favorite recipe. Ground beef (or turkey) is mixed together with other ingredients, shaped into a loaf, and baked. Often the top is covered in ketchup or another kind of savory sauce. It’s delicious served with homemade mashed potatoes, a fresh and easy tomato salad, and some dinner rolls!

Meatloaf Ingredients And Variations

The best meatloaf recipe has the perfect blend of beef, a binder, and seasonings.

GROUND BEEF Ground beef is the base for this recipe, and it bakes up savory with this delicious HelloFresh recipe! The result is juicy, tender, and so flavorful! 

SEASONINGS The seasoning creates a delicious Asian-inspired glaze that makes this meatloaf different and full of delicious flavor! This HelloFresh version also has a sweet/savory soy sauce, adding to the flavor and sealing in the juices.

VEGGIES Green beans are the veggie of choice for this recipe. Broccoli or asparagus are also great options.

RICE Use Jasmine rice for its delicate and fragrant flavor. It pairs perfectly with these glazed mini meatloaves!

VARIATIONS Oftentimes, an egg will be used as a binder, as will oatmeal or simply small pieces of torn bread. Feel free to get creative with the seasonings and binders to create your own signature meatloaf!

Sheet Pan Dinner Recipe

  1. Prepare ingredients as per instructions below. Cook rice.
  2. Mix together meatloaf ingredients and make into 4 loaves.
  3. Place meatloaves and veggies on same baking sheets and roast per recipe instructions.
  4. Make the glaze. In the last 2-3 minutes of baking, brush glaze onto each mini meatloaf and bake.  
  5. Fluff and season rice, toss veggies with sauce and seeds.
  6. Plates and drizzle with remaining glaze and serve!

PRO TIP: Save extra glaze for serving. Toast sesame seeds in a sauté pan to make them extra flavorful and crispy.

This is the best meatloaf recipe when you are short on time, but want a dinner that’s big on flavor!

    sweet soy glaze

    Korean Chili Flakes
  • 2
    tablespoons
    sesame seeds
  • 1
    teaspoon
    vegetable oil
  • 2
    tablespoons
    butter
  • salt and pepper

  1. Adjust racks to top and middle positions and preheat oven to 425˚F. Wash and dry all produce. Peel and mince ginger. Trim and thinly slice scallions, separating whites from greens; mince whites. Prepare beans, cutting off ends, if necessary. Quarter lime.

  2. Melt 2 tablespoon butter in a small pot over medium-high heat. Add half the ginger and cook until fragrant, 30 seconds. Add rice, 1½ cups water, and a big pinch of salt. Bring to a boil, then cover and reduce heat to low. Cook until rice is tender, 15-18 minutes. Keep covered off heat until ready to serve.

  3. While rice cooks, in a large bowl, combine beef, scallion whites, panko, remaining ginger, salt (we used 1¼ tsp kosher salt), and pepper. Gently combine, then form into four 1-inch-tall loaves. Spread out across entire baking sheet.

  4. Add green beans to a second baking sheet and drizzle with oil; roast meatloaves on top rack and beans on middle rack. Roast until meatloaves are cooked through and broccoli is browned and tender, 15-18 minutes.

  5. Meanwhile, in a small bowl, combine sweet soy glaze, ketchup, a pinch of chili flakes to taste, and a squeeze of lime juice to taste. In the last 2-3 minutes of roasting, remove meatloaves from oven; brush tops with 1 tablespoon glaze mixture on each. Return to oven until glaze is tacky. TIP: Save any remaining glaze mixture for serving.

  6. Fluff rice with a fork and season with salt and pepper. Toss beans with ponzu sauce and half the sesame seeds. Divide rice, beans, and meatloaves between plates. Drizzle meatloaves with any remaining glaze mixture. Garnish with scallion greens, remaining sesame seeds, and as many chili flakes as you like. Serve with remaining lime wedges on the side.
